This is one of my favorite, simple dishes that is really perfect for any night and also a great meal prep for busy weeks.
This bowl is loaded with antioxidants and anti-inflammatory agents to maintain a healthy body. The main anti-inflammatory ingredients are turmeric and avocado. These are not only beneficial for acute inflammation after a weekend of nights out and salty foods, but they are a great way to help prevent chronic inflammatory diseases that are so prevalent among our nation today. The recipe below can easily be altered using your favorite hummus dip, lower fat cheeses, or adding your favorite veggies!
2 servings Trader Joe’s riced cauliflower
Roughly 2 cups of broccoli florets
4 oz chicken
1 tbsp Trader Joe’s eggplant hummus (or hummus of choice)
1/4 cup Trader Joe’s Almond Cheese
1/2 small avocado
In a pan, cook chicken for approx. 20 minutes using coconut oil spray, making sure to flip half way
In another pan cook the cauliflower rice and broccoli in turmeric for approx. 10-15 minutes on medium heat using coconut oil spray
Measure out the hummus and almond cheese and slice the avocado while the chicken and veggies are cooking
Once the chicken is cooked, take it out of the pan and cut it into pieces
Pour the turmeric cauliflower rice and broccoli into a bowl, top with all other ingredients and your anti-inflammatory, nutrient-dense dinner is ready to enjoy 🙂
