Flaxseed Chicken Tacos and Cilantro-Lime Cauliflower Rice

Looking for a deliciously healthy Taco Tuesday?! You have to try these three ingredient, fast and simple flaxseed tortillas! Even better? They are easily made into tortilla chips for the perfect appetizer! Make my cauliflower rice recipe using cilantro and lime for the perfect taco Tuesday combo.

Serves 1


3 tbsp ground flax meal

3 tbsp all egg whites

1.5 tbsp water

4 oz chicken

1/4 avocado

2 tbsp Trader Joe’s Hatch Valley green salsa

2 servings Trader Joe’s riced cauliflower

1 handful cilantro

1/2 lime


Preheat oven to 350 degrees

In a bowl, combine flaxseeds, water and egg whites and desired seasonings (I used a pinch of paprika and oregano)

Roll mixture into a ball of dough with your hands

Line a baking tray with parchment paper and place dough mixture on the paper

Using another piece of parchment paper, press out the flax dough into desired tortilla size and thickness (this mixture gave me a medium size, thin tortilla)

Place in the oven for approx. 30 minutes or until crispy on the edges

Cook chicken in a pan using coconut spray for 15-20 minutes on medium heat or until cooked throughout

In another pan, combine cauliflower rice, cilantro and lime and cook on medium heat until the cauliflower is slightly browned

Shred the chicken once cooked and mix in green salsa

Top the flax tortilla with chicken, avocado and any additional toppings and enjoy your guilt free taco tuesday!!
