Vegetable Chicken Salad

This salad, put together with my favorite Trader Joe’s finds, is by far my go to work lunch.  And the best part is it is so easy to vary based on your own personal needs and goals.  It is the perfect blend of healthy carbs, proteins and fats and can easily be brought along to work, school or any long day on the go for a quick, balanced lunch.  Or if you prefer, enjoy as a yummy veggie packed dinner!

Ingredients

3 cups Trader Joe’s cruciferous crunch lettuce blend

4 oz peppered chicken breast cooked with coconut oil spray

1 Trader Joe’s Broccoli and Cauliflower patty

1/2 avocado

Dressing: 1 tbsp Trader Joe’s eggplant hummus mixed with 1 tbsp Bragg’s Pomegranate Vinaigrette dressing

Instructions

Spray a pan and cook the chicken on medium heat for 15-20 minutes or until fully cooked

In another pan, cook the broccoli and cauliflower patty on medium heat until browned on each side

In a cup, combine the hummus and vinaigrette dressing until fully mixed

Combine all ingredients and top with dressing
